Fruit is hand‑picked, whole‑bunch pressed, and wild‑fermented in seasoned French oak and clay amphora, before spending around 10 months on lees with gentle stirring. The result is a wine that’s vibrant and full of character, with flavours of grapefruit, passionfruit, nashi pear and a chalky, saline minerality. It’s textured yet refreshing, with tension and length that make it a standout Western Australian white.
